Mushroom Polysaccharides Explained: What They Are and Why Labels Mention Them

What Are Mushroom Polysaccharides?

Polysaccharides are long chains of sugar molecules linked together. In mushrooms, they are found primarily in the cell wall and are among the most studied groups of compounds in functional mushroom research. When a supplement label lists a “polysaccharide” percentage, it is describing how much of this carbohydrate structure the extract contains — not a vitamin, a drug, or a guaranteed health effect.

Polysaccharides are not unique to mushrooms. Plants, algae, and many foods contain them too. What makes mushroom polysaccharides interesting to researchers is a specific subgroup called beta-glucans, which have been studied in laboratory and human trials for their effects on immune cell activity.

Where Polysaccharides Come From in a Mushroom

A mushroom has different parts: the fruiting body (the visible mushroom), the mycelium (the root-like network), and sometimes spores. Polysaccharides vs. Beta-Glucans: What’s the Difference?

These two terms get used interchangeably in marketing, but they are not the same thing.

  • Polysaccharide: A broad chemical category — any long chain of sugar units. Starch and cellulose are polysaccharides too.
  • Beta-glucan: A specific type of polysaccharide found in mushroom and fungal cell walls, and the type most often studied for immune-related activity.
  • PSK / PSP: Named compounds isolated from turkey tail mushroom (a protein-bound polysaccharide). PSK is an approved adjunct cancer therapy in Japan, though not in the United States.

In other words, all beta-glucans are polysaccharides, but not all polysaccharides are beta-glucans. A label that just says “30% polysaccharides” without specifying beta-glucan content tells you less than it might seem.

Why Supplement Labels List a Polysaccharide Percentage

Manufacturers list a polysaccharide percentage as a standardization marker — a way to show that the extract was tested and contains a measurable amount of this class of compounds. It is a manufacturing and quality detail, not a dosage of a proven active ingredient with an established effective range. Different labs also use different testing methods, so percentages are not always directly comparable between brands.

What the Research Actually Shows

According to the National Cancer Institute (NCI), part of the National Institutes of Health, laboratory and animal studies have examined how mushroom polysaccharides — including PSK from turkey tail and the polysaccharides in reishi — interact with immune cells such as natural killer cells and T cells. Some human studies in Japan have looked at PSK alongside chemotherapy for gastric, colorectal, and lung cancers, with researchers reporting immune-related changes and, in some trial reviews, longer survival when PSK was added to standard treatment. Reishi has also been studied in small human trials for immune-related changes in lung cancer patients and for its effect on benign colorectal tumors.

Two evidence limits matter here. First, most of this research was conducted in Japan and China using regulatory standards that differ from the FDA process, and the FDA has not approved turkey tail, PSK, or reishi as a treatment for cancer or any other medical condition. Second, much of the underlying laboratory and animal work has not been repeated in large, independent U.S. clinical trials. This is preliminary and mixed evidence, not proof that any supplement treats or prevents disease.

A Quick Label-Reading Checklist

  • Does the label specify beta-glucan content separately from total polysaccharides? If not, the number of polysaccharides alone tells you less.
  • Does it specify which part of the mushroom is used — the fruiting body, mycelium, or both?
  • Does it name the testing method used to measure polysaccharide content?
  • Does the product avoid claiming to treat, cure, or prevent any disease? Under U.S. law, dietary supplements cannot legally make those claims.
  • Is there a manufacturer or third-party certification, such as contaminant testing, listed?

Who Should Be Extra Careful With Mushroom Polysaccharide Supplements

Because polysaccharides such as beta-glucans and PSK have been studied specifically for their effects on immune cell activity, a few groups have extra reason to check with a healthcare provider before use:

  • People currently undergoing chemotherapy or radiation therapy
  • People taking immunosuppressant medication, including after an organ transplant
  • People with an autoimmune condition
  • People who are pregnant or breastfeeding
  • People with an upcoming surgery, since any supplement should be disclosed to your care team beforehand

FAQ

Is a mushroom polysaccharide supplement the same as a beta-glucan supplement?

Not necessarily. Beta-glucan is one type of polysaccharide. A product may contain other polysaccharides with little or no beta-glucan, so check whether the label distinguishes between them.

Does a higher polysaccharide percentage mean a stronger or better supplement?

Not automatically. The percentage depends on the extraction and testing methods used, and it does not, by itself, tell you how much beta-glucan or PSK-type compound is present.

Can mushroom polysaccharides replace cancer treatment or other medicine?

No. The FDA has not approved mushroom polysaccharide products such as PSK or reishi extract as a treatment for cancer or any other condition. Never start, stop, or change a medical treatment without talking to a qualified healthcare provider.
